Simple, Yet Healthy

As I prepared my simple dinner for two tonight, I remembered back to a conversation I had with a friend. A vegetarian, she claimed she rarely cooked at home becaused vegetable-based dishes were too time consuming and difficult. I'm no where near being a vegetarian (me like me some meat!), but vegetables have always been such a large part of my life. So, to say the least, I was surprised and in an attempt to convince her otherwise, I rattled off some simple recipes she could try.

Tonight's meal is a prime example of how simple (and delicious) vegetables can be. On the menu was whole wheat rotini (growing up my brothers and I called this pasta shape "screwdrivers"; Big D coined the term when he was 3, confusing the shape of the pasta (screws) for the tool) , with blanched and then sauteed broccoli, red onions and enough olive oil for dressing. We topped it off with softened goat cheese - delicious! And the best part, it took me about 30 minutes to prep, cook and serve. Take that Rachel Ray!
